The only way a vampire can die is if they are burned to death in the sun or by catching on fire. If vampires are starved for blood, they'll experience bloodlust, or the uncontrollable desire to drink blood. They will attack the next living thing they encounter to satisfy their need to feed. However, if a vampire is starved for blood and is somehow unable to get any, due to being somehow imprisoned, they will become extremely weak. In worst-case scenarios, they will be unable to move and their bodies will sort of decline to the point where they look skeletal (they will not, however, lose limbs because of this). Drinking blood again will restore them to normal.

I dunno That's the idea, but it doesn't need to be an object, and it's only psychologically crippling. A vampire whose Anathema is knives could be incapacitated by thinking of one or coming into contact with one, but he or she should still heal from a stab wound if he or she was stabbed with one. Vampires regenerate automatically.
